Will be giving my 3rd brisket a go later this week and would appreciate some advice.

Will get one of the 8+ kg ones from Costco and this is a little bigger than my first 2 (around 5kg's)

Wondering if anyone can give an idea on roughly how long to expect this beast to take and rub suggestions?

Will be cooked on a GMG pellet smoker and have done s&p at around 225°f but happy for suggestions.

Your 8kg brisket will be down to 7kg after you trim it and at 225°f you'll be looking at a 12-13 hour cook I reckon but allow an extra hour or two to be sure. My 9kg took 13 hours at 250°
