Ive gone out and bought some MSG to trial.

Im doing some beef ribs for tomorrow night and want to try 1 rack with and 1 rack without.

Ive done a search and there is a lot of debate on the usage but not much on the amount.

Of the few that I found said about half a teaspoon to a pound which I estimate as a teaspoon per kg.

Am I on the right track with that assumption, or reduce that some more as you dont eat the bones?

Thanks.
Jason.

I don’t use the stuff even in my commercial mixes, but I’d think your assumption on not including bone weight would be valid.

Thanks for taking the time to reply Richtee.

With looking up this subject I saw some posts that you commented on and I understand where you are coming from.

Im going to halve the amount I thought and see what the difference good or bad in the 2 racks is.

I have 2 racks of 5 bones each for just under 2 kg each rack.

Im assuming that the bones would be about half the weight and therefore half the dose of MSG would be half a teaspoon for the kg of meat on the one rack.

I will post my results.

Jason.
