my opinion, sauce the back of the brisket with au jus and present the brisket as un-sauced.
but it depends on how much natural flavour your brisket has. if its a grass feed with big beef flavour then it may not need anything but if its grain fed and low in flavour then beef it up
(just my opinion)

I havent sent them out yet, but if you can see yourself on the floorplan, your in. I normally send out a few emails before the comp.

The floorplan is on the Facebook page and the ABA Facebook group.
