I've been lurking in the shadows for a while now. Built me a UDS maybe 18 months ago, works pretty good and I'm loving cooking with it. Just wish I didn't live in an apartment.
Anyways... I might have an exciting new project on the horizon! Long story short... I'm an engineer at a big food manufacturing plant, and we have a machine which is an absolute pain in the axe, and is costing us over $200k each year due to the problems it creates. I'm installing a project now to replace it, so it should be de-commissioned by about year end.
There's been loads of talk about dousing it in petrol and setting light to it when its finally gone as some kind of celebration. Which got me thinking... we have a monthly BBBQ at work anyway... should I perhaps turn it into a smoker and have a kind of celebratory send-off / morale booster? I've got money, resources and trades people that would get behind me to make this happen, and I'm pretty sure management would be on board too.
So my question to you gents is... how would you convert something like this into a smoker that will be fairly certain of success? The body is full stainless construction, use your imagination. I'm happy to ditch the motor and gearbox from the base, but I'd still like the stainless body to be recognisable as the machine it is. It would need to feed about 60 people.
From memory I think its about 1300mm internal diameter.
