Well, the exterior is all finished, and all that's left to do is finish the charcoal basket (basiclaly just pick up the pizza tray and affix to bottom as an ash tray).

what a sexy looking piece of kit.
are you going to put on a front handle for the weber instead of top?

And the charcoal basket is finished.

  • Charcoal grate from 18.5" Weber
  • Some 1"x1/2" steel mesh
  • Stainless tie wire
  • Aluminium 15" deep pan pizza tray
  • Stainless bolts, washer, nuts n stuff

The night has finally arrived, it's seasoning time!. Cleaned out and rinsed the inside before letting it dry. Then gave it a good liberal coating of canola spray, and fired up about 1/3 of a basket of charcoal with some hickory chunks.

So, first non-ribs related cook yesterday, made some pulled pork smoked over heatbeads and apple wood. Had a 2.4kg piece of pork scotch/collar butt/Boston butt which I put on at 8:30am. Hit the stall at around 165°F a bit later than I would have liked, so I wrapped to get it through and pulled it out of the smoker at 8pm with an internal temp of 202°F.

Pork pulled beautifully and tasted fantastic, very happy with the results. Served on toasted brioche rolls with Sweet Baby Rays BBQ sauce and my own recipe apple slaw.
