 Post subject: low n slow chook

hi I am cooking a chook low n slow in my off set smoker
using mangrove charcoal and redgum split log for smoke
just checked the smoking colour is looking good I will take pic and see if I can upload them later
fingers crossed I am new to smoking in a off set smoker all trial n error
