Cooked up some pork ribs today using the 3-2-1 method. I bought the ribs from woolies and they were actually pretty meaty, more meat than the ribs I had at Tony Romas on Friday [FACE WITH TEARS OF JOY]

3 hours of smoke at 75c
2 hours in foil with an apple juice broth at 107c
1 hour mopped with sauce at 175c

I brined the ribs for a few hours before the cook.

They were absolutely delicious.
