Well... Almost all the way to a brisket for dinner..

Salted, peppered, sweet paprika, onion powdered, sit for 12 hours

Into the UDS!

Holding well...

Image

Then I copped a huge temperature spike about 3 hours into the cook... 180deg and rising.. Something much of flared up, pretty much had to shut the UDS to drop it... 20mins later stable again..

6 hours in and, other then the flare up, holding well.

Looking forward to this as it's my first brisket.

Hoping it all works out. First brisket is nerve racking. I'm still in therapy for mine.

It was awesome, the juice that came out when I pushed the knife through was wonderful! MiL, wife, and kids all inhailed the meat like it was there last. Quite happy
