Hey all,

1st attempt today cooking a brisket this size. I've done 5 briskets in the 2-3kg range.
Still learning how to use my smoker, it is only a cheap stratco version of a WSM, already starters modifying for ease of use and temp reg, haven't seen any other threads of people using the stratco water smoker, would be keen to hear from anyone with any hints or tips.

The briskets been in for 5hrs now, had one major slump in temp already but rectified that. I'll try get some photos up soon of progress.

Not bad at all, reheated it today (had my sons 1st bday with 50+ ppl, so it was one item on the menu had to cook yesterday n reheat to serve) wasn't sure how it would go reheating but pretty happy.
No complaints from the guests, wasn't quiet as moist as I would like but still a good result.

Again forgot to take photos once I cut her open, and no leftovers after the party.

Haha we were that busy cutting that and the 6kg of pullapart pork my wife did, I totally forgot.
I'll just have to do another one then for the pics.
