Ive cooked heaps of regular costco briskets with cook times at 250degF for 60-75 min per pound.
Ive only cooked one wagyu brisket and found it was done too 200degF internal at 30-40mins per pound, so I’m expecting this one to reach 200degF internal after 6 hrs at pit temp of 250-275degF.
Can any confirm my expectations?
