Ribs and wings marinated in bbq sauce
Mushrooms stuffed with bacon and Worchester sauce
Jalapeños stuffed with mushroom and gouda cheese wraped in bacon

That will come with practice.
With your pork shoulders and brisket they can rest for up to 4 hours.
Chicken, pork ribs ect can be a little more tricky.
What you can do is start to learn the hot/cool spots of your smoker and use them to your advantage

I have one of these too :-D seems to work well and heat is very controllable.. only thing I wasn't too sure of was how much pellets to use to smoke 6 racks of ribs with..
