Very true!! They also make a pork crackle salt but I haven't bought and tried it yet!

They brought out the Pork Crackle after I sent them the above photos along with my observations.

In return they sent me a box of Mitani goodies.

So the Pork Crackle is the one to use.

A local butcher put me on to the Mitani Chicken Salt trick.
