Costco sell pork spare ribs displayed in fridge section but once you trim them down they're not that great. If you talk to meat manager he will order in restaurant quality baby backs trimmed st louie style but you need to buy a bag ( about 6 racks ) or a box ( 12 racks ) Last bag i bought was about $80 and it works out at $15.90kg. Hi I actually live in Perth and found myself in the same delemar as you about 6 months ago. If you go to any good butcher they should be able to help you out. You need to ask them for meaty spare ribs cut from the belly section. Since I have figured this out I can get them from a range of different butchers over here. Ive found that most slabs weigh between 1.5 to 2kgs and are massive! They are pretty much what the Americans call 'spare ribs' and then you can trim down to 'st louise' cut. If I could figure out how to loads pics then I could show you a photo that you could take to your butcher. Price wise they are around $16.99 per kilo
