 Post subject: USA cut pork ribs

Hello,

Can anyone suggest a melb butcher they go to that cuts ribs in US style (that still have meat on them). I have had a search through the forum and there are some good tips for briskets but was keen to hear who has had success with particular butchers for pork ribs (either St Lois style or baby back as they are referred to in the States). I have got some before from the Vic markets Asian butchers but was keen to see if there were any others folks could suggest.

Perhaps we could come up with a list of the best meat suppliers nationally in each state based on experience.

I have a butcher in Beaumaris that does great pork shoulders for me from the Otway free-range brand. He also won best ham in Vic too. The pigs he uses a quiet small though so he cant do ribs the way i want.

Any thoughts would be appreciated.

From what the Melbournites tell me, Costco sells pretty decent ribs.

Is this still true? I hope so - the Adelaide Costco FINALLY opens its doors here soon!

Costco have great ribs, I purchased a few more racks today. Vietnamese butchers at my local market (Preston Market) have the closest to baby backs I have ever found. I've never seen a rack of spare ribs like you'll find at Costco anywhere ...

ahhhh pork ribs. The absolute thorn in every Australian BBQ'rs side. The truth is that pork ribs in Australia are expensive and too lean/small to be anything like those available in the USA. The worse news is that this is very unlikely to change. I work for a large Australian retailer and know the meat buyer quite well. Had a quick chat to him re: sourcing american style spare ribs or baby backs and the response was disappointing. Long story short in order for a retailer to stock these cuts they would need to buy the entire pig (instead of just buying cuts through a bone room) leaving them with cuts that just arent popular with Australians and thus making it unprofitable. After speaking with some industry folk up at Port Macquarie they said exactly the same and added that very little will/can be done about it.

Your absolute best bet is Costco. They have spares for $16.50 a kilo (or thereabouts) which will generally cost you between $20-28 per rack. Expensive but so far its the best option.

I used costco ribs at the competition and came second. I am not sure what ribs were used for 3rd place but 1st place also used costco ribs.

great tips thanks- i will get myself a costco membership by the looks. probably overdue for other bulk buys any way.

Nothing better then smoking a good rack of ribs so keen to get a decent supplier on the go.

got to costco finally with a mate. They have the proper kosher dills (pickles) too for anyone who cant find decent ones around. I will sign up - was impressed with their ribs. managed to get two packs that were 1.8kg each with two racks in each of what looked like baby back equivalents in them. they also had the flat cut 'st louis' style. they just call them all spare ribs. I got a decent pork loin too for a later date.

I cooked up 11 kgs of wings. 7 kgs of brisket, a 5 kg pork shoulder and 8 racks of ribs for Sunday lunch. busy day started off at 4.00pm on the Saturday and used the wsm, weber kettle and 4 burner gasser to finish the ribs off in foil. all went well. feed 30 odd people.

They are spare ribs, you make them St Louis style by trimming the top piece off ...

For anyone in Sydney the Meat Emporium in Alexandria now stocks these meaty spare ribs however a little pricier. I plan to speak to the manager to see if he can do a better price so watch this space. In the meantime if you dont fancy a trip to Auburn give these guys a go. Cant remember how much per kilo but racks were about $28.
