Hi folks,

I hit my butcher up during the week to cut me some ribs from the belly, take the skin off and choose a lean piece, not too fatty. This is what I got. More akin to a slab of beef shorties.

Given the thickness I have to change my tactics off cooking. Thinking a 3 2 1 ratio might be in order. What would you do?

She is dry brining now, ready for a rub in the morning. Will put in at 250f with a mixture of hickory chips and apple chunks. Cook till easy probing.

I have a couple of slabs like that in the freezer. I'm going to cook 1 in a few weeks but I'm not wrapping it.

Still cooking pesto. I have been stalled at around 170 for ages. I have wrapped to give it a nudge towards 200 before I unwrapped sauce and finish off at around 275. Feel if I don't wrap it could be a long night and I am hungry.
