I know this might be a little late adding to this but I've been having a good hit rate at my local FoodLand (Metcash) - of all places - near the hyperdome south side. Lately, I've scored some very nice beef plate ribs at $10 Kg and can get Brisket @ $8.99 Kg. The Guys and Gals in butchery are excellent to chat to and said they can basically get anything, given a bit of notice. They say that no one comes in anymore and asks. Now, the Beef is not Wagyu or Cape Grim and are not anything fancy but isn't what the essence of Low and slow Barbecue is ?? Turning a dumb hunk of lesser quality meat and trimming it, massaging it and cooking it long enough to eclipse the other cuts. It's Local Australian Beef being supplied by and Australian Wholesaler so what's not to like :).

I'll get off my soap box now!

Went to Tasman meats Shepparton and found Brisket on the shelf. it was point and flat $8.99 kg

Picked up a Pinnacle brisket this morning from Sardes. The Cape Grim's were huge, but I wasn't gonna get it on till about 12 o'clock, so I went for the Pinnacle at 5.1 kg.

Anyway, I was having a chat with Harry and he said that once he's sold out of his current brisket load, he's gonna stop selling them. At the moment he is running six different lines of brisket but he doesn't make much money off them and he is sick of moving the boxes around in his fridge.

Just a heads up if anyone else buys theirs from him.

So finished up my first brisket on the wkd and didn't go to badly but after watching plenty of US videos on preparing the meat was surprised how little by how little fat was on there, no chance at the 1/4" layer Franklin specs. Is this the norm for getting a brisket in Australia/Perth? Was a Harvey '100 Day Brisket', photo below is before any trimming by me. Even the fat on left is very thin and soft.

IWantSomeBrisket this is the norm for oyur average head of cattle sold in a butcher as they are small beasts.
the market for lean beef is what impacts the size/fat content of brisket.
this is why i created this list because there is only limited suppliers that will have full oxen supply that you get a good size marbled brisket.

in the us much of their cattle is corn or grain fed hence the bigger size and larger fat content.
Inn saying this as a rule of thumb corn/grain fed cattle dont have as "full" a flavour as grass fed buy you pay the price both in $$$ and in size/marbling on average

Yeah it was from Mondo's on the list but was their cheaper and smaller brisket, had some big wagyu's but wasn't keen on risking all the cash on my first brisket. Going to try the local butcher next, they seem keen to help and can leave the fat cap on
