Always best to have a look yourself I think. That way you can get a feel for the thickness of the flat, marbling etc.

Went and had a look. Exactly what I'm after, didn't purchase one yet as i dont want to have it in the fridge for 2 weeks. how long do you reckon one of these beasts takes? I'm planning on around 12 hours but I'm cooking for guests, any advice from your experience?

I usually budget 15 hours for briskest. Esp the big ones.
Better to budget more time and have it resting in an esky for a few hours which won't hurt it at all, than have ur guests waiting for 3 hours.
