Interesting. I'd never thought about how much air flows out of a pit. I mean I know it does, but never thought about how fast or slow the air flow was.

for me its to compare offsets, cabinet smokers and pellet poopers on the market.
also this model shows me humidity which will let me measure (with the correct calculations) how much moisture is lost over a cook based on air velicity and ambient humidity

Very interesting Beaver, I have wondered about humidity before, hadn't thought about flow rates.

Yea, bbqs are super interesting and I want to know how each variable changes things.
It would be amazing to have like a bbq Lego kit where there was 10 different size chimneys 10 different size fireboxes could change angles ect ect and then a few weeks to play and gather data.
I know that GE is working with Aaron Franklin over in Austin on a pit to measure co2 o2 and a whole lot of other sensors but I don't think they quite understand everything that needs to be measured.
The chemical composition of the smoke is super important, where the heat radiates from. Whether it's convection or radiant. Fluid dynamics of the pit ect ect.

Right now the jambo pits are all the rage with the comp guys in the us and they seem to be about fresh smoke rolling across the top of the bbq. I'm looking forward to seeing jesters and getting some readings to understand just how much airflow the pit generates
