Hi all!

My wife and I just brought home our Hark stubby this weekend. My first cook on my first offset, and I dried out our ribs!!! I’ll chalk it up as a learning curve.

First thing I’ll be researching is wood! Any great suggestions for Australian wood for smoking? I hear Ironbark is the go to, but I am just curious if Oak, hickory or the other American species are readily available?

Looking forward to diving into all the insight on the forum!
