Hi!

I am ex-pat Aussie living in Sweden. I got into Texas style BBQ years ago despite never actually tasting it (not much available where I live..)! I started learning with books and basically started from there. I got into Daniel Vaughn via Anthony Bourdain and am currently devouring Aaron Franklins BBQ Manifesto (great book!)

Recently I’ve been able to travel with work and have started my education in reality instead of books and have made friends with a lot of pitmasters which has been fun and extremely valuable. I’ll be making a road trip soon to visit them all. I’d like to do something... uniquely Aussie with low and slow with them, but not 100% sure what a good approach would be?

So, basically - I would love some help in planning an “Aussie Low and Slow” menu that I could take to my new friends to show them something they might not have seen. We can get kangaroo and some other bits and pieces so, any advice is welcome! But if imported ingredients are required that’s good to know

I’ve got access to an offset smoker so can practice a bit in advance too!
